Bullitt used to have top honors, followed closely by the French Connection, but both have been forced down one place by the one in Death Proof. (Oh, and please don't even mention Smokey and the Bandit or The Blues Brothers here -I'm talking about literally sitting on the edge of my seat chewing my fingernails off while watching kind of car chase here).
Planet Terror = The PERFECT Drive-In movie.
I've mentioned before that I used to work at a drive in, but I don't think I ever gave any details. I worked at a LOT of drive-in theatres. I've run 20 minute changeover systems with carbon-arc projectors (using Cinemecanica heads), Xenon bulbs (both vertical and horizontal) 10,000 and 20,000 foot reels, both air and electrical platter systems, and the full range of audio from simple optical monotrack all the way to THX DVD systems. I spent many years in the movie business; and I have a very special place in my heart for the classic "B" drive in movie.
Now don't misunderstand me. When I refer to a "B" drive in movie, I'm talking about the two most important things for the drive in patron: Breasts and Blood. Plot, acting, effects, etc all play second fiddle to the sexuality (the implied "tease" is always more important than blatant nudity) and violence (the more the better) of a drive in movie. In this, Rodriguez delivers, and delivers in spades. Rose McGowan absolutely drips sensuality in every single scene she's in; and Marley Shelton does the same for every one of hers. Wow. Add to this a huge amount of gratuitous violence, gallons (swimming pools worth) of blood, and Freddy Rodriguez wielding knife and pistol with reckless abandon and you've got one heck of a recipe for the perfect drive in movie. Josh Brolin, Jeff Fahey, Michael Biehn (really??) and a host of others (including some interesting cameos) round out this excellent film.
The really cool thing about this movie (and also Death Proof) is that even though it is an homage piece to a classic type of film; it manages to do so without falling into the trap of stupidity. The acting really is excellent, the direction is awesome, and the effects are perfect. Robert Rodriguez scores a perfect 5 reels on this one. Planet Terror nails every single cliche for this genre, and does so perfectly.
Going back to Death Proof; I'd like to comment on Zoe Bell's acting. Most (if not all) of her work in the past has been as a stunt double for other actresses. I predict that portion of her career has come to an end. This lady has a great "look", incredible onscreen presence, and comes across as an intelligent, engaging character. I have a feeling she will be able to "pick her scripts" after this film.
Kurt Russell is absolutely awesome in this movie (at one point he gives the camera is famous S.E.G.), and plays his role perfectly. The rest of the cast are excellent as well. Death Proof earns 5 reels. One of the things I have always loved about Quentin Tarantino's films is the dialog: his characters are engaging and interesting because they have great lines. I think all boils down to the number of microgivashits* in his blood. Tarantino has a count of over 20,000; higher than Master Lucas. This leads many (including myself) to think of him as the one who will bring brains back to the movies.
Tarantino engages the audience by giving his characters something to say -and never lowers the intelligence of his dialog to pander to his audiences. He always expects his audience to be smart enough to follow what is going on; and delivers again with Death Proof. The film is an action packed adrenaline rush; but it is a smart adrenaline rush.
I was really excited when I first heard about Grindhouse I'm very glad they didn't eragon the project. Grindhouse lives to its expectations; and then some. (The Previews within the movie are GREAT).
I'm hoping that someday I get to meet Quentin Tarantino face to face, and perhaps hang out with him for a few hours. Not because I'm a fawning lunatic fan; simply because I really dig his taste in music. I'll bet his music collection is incredible.

Putting Death Proof aside, that's the best car chase ever. DeNiro ACTUALLY PEED HIMSELF DURING FILMING.
And with all the other stuff that was wrong with it, I think you have to give Matrix: Reloaded credit for a pretty monster car chase as well.

The car chase in Matrix: Reloaded was very cool; however it was all CGI. The one in Death Proof was pure old school - nothing but cameras, cars, and (insane) stunt crew.
When I stated that I was on the edge of my seat I wasn't kidding; my legs were cramping after the movie ended.

Highlights of the second chase include:
270 degree handbrake turn when overshooting a roundabout.
Drivers actually using seat belts, headlights and horns.
The chase going the WRONG WAY through an inner city tunnel.
Natscha McElrone driving a BMW M5. (YUM!)
There were over 150 stunt drivers involved in the sequence. And yes, there's a LOT more chase than crash in the sequence (though the collateral damage is severe.)
